Actually no, it does not work that way. The issue is CO2, not the oxygen that the cells meter. The risk of old sorb is that it won't absorb as much CO2 and you could experience a dangerous situation without notice. CO2 monitoring on rebreathers is not common as it is somewhat unreliable and expensive.

Every rb diver is trained on hypercapnia. How to recognize it and what to do. I've been doing dives with 1 year old sorb past expire to depths regularly far beyond most divers here. Its not a big deal, but you accept your own risk tolerance. I havent thought twice about diving it to 300ft in 3 hour+ dives.
